Nesting and Soup

We are expecting quite a bit of snow this afternoon and into the evening hours


it`s got me feeling all homey and ``nesty``



and drawn to the kitchen


for something wonderful to warm my soul 


is there anything more comforting than a pot of homemade soup?

here`s one I like to make on days like this

Black Bean & Kale Soup

1 tbsp olive oil 1
1 onion, chopped
1       cloves of garlic , minced
1 carrot, chopped
1 celery stalk, chopped
1/2 tsp dried thyme
1/2 tsp pepper
6 cups vegetable stock
1 cup gluten free pasta
19 oz can garbanzo beans, drained and rinsed
1 cup chopped kale
1 cup black beans, drained and rinsed


In saucepan, heat oil over medium heat; cook onion, garlic, carrot, celery, thyme and pepper, stirring occasionally, until vegetables are softened, about 5 minutes.

Add stock and beans; bring to boil. Reduce heat and simmer until slightly thickened, about 30 minutes

Add pasta and kale; cook until tender, about 10 minutes

Sounds delicious! Enjoy your snow. We will be pulling out the grill this week...the temps are suppose to reach into the 70s???? I am not kidding. We have been on a roller coaster ride. Stay safe and warm.

Mmmm...looks like a wonderful, cozy, comfy and delicious day. Thanks for sharing the soup recipe. I want to try it. It fits perfectly into our elimination diet and sounds really good.

I feel nesty and homey all the time. No matter the weather. In fact, we've had a 3-day weekend and I've only put on clothes twice -- to go to the store for something (I sent my son in) and to take him to a friend's. :) That sounds like my kinda soup! Warm wishes, Tammy
